  • 2 cups shredded sharp cheddar cheese
  • 1 cup sour cream
  • ½ cup whole milk
  • 4 slices cooked bacon (chopped)
  • 2 tbsp butter
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 1 tsp black pepper
  • Optional garnishes: Green onions, chives, or extra cheese

Instructions

  • Prep the Potatoes:
    Peel and dice the russet potatoes into bite-sized pieces. Boil in salted water for 10-12 minutes or until fork-tender. Drain and set aside.
  • Sauté the Onion and Garlic:
    In a skillet, melt butter over medium heat. Add diced onions and cook until softened (3-4 minutes). Add minced garlic and cook for another minute. Set aside.
  • Assemble the Casserole:
    Preheat oven to 350°F (175°C). In a large bowl, combine boiled potatoes, sautéed onions, garlic, sour cream, milk, salt, and pepper. Mix well. Gently fold in chopped bacon and 1 ½ cups of cheddar cheese. Transfer the mixture to a greased 9×13-inch baking dish.
  • Bake:
    Sprinkle the remaining ½ cup cheddar cheese over the top of the casserole. Bake for 25-30 minutes, or until golden brown and bubbly.
  • Garnish and Serve:
    Let the casserole cool slightly. Garnish with green onions or chives before serving.
