- 2 cups shredded sharp cheddar cheese
- 1 cup sour cream
- ½ cup whole milk
- 4 slices cooked bacon (chopped)
- 2 tbsp butter
- 1 small onion (finely diced)
- 2 cloves garlic (minced)
- 1 tsp salt
- 1 tsp black pepper
- Optional garnishes: Green onions, chives, or extra cheese
Instructions
- Prep the Potatoes:
Peel and dice the russet potatoes into bite-sized pieces. Boil in salted water for 10-12 minutes or until fork-tender. Drain and set aside. - Sauté the Onion and Garlic:
In a skillet, melt butter over medium heat. Add diced onions and cook until softened (3-4 minutes). Add minced garlic and cook for another minute. Set aside. - Assemble the Casserole:
Preheat oven to 350°F (175°C). In a large bowl, combine boiled potatoes, sautéed onions, garlic, sour cream, milk, salt, and pepper. Mix well. Gently fold in chopped bacon and 1 ½ cups of cheddar cheese. Transfer the mixture to a greased 9×13-inch baking dish. - Bake:
