Description

Ingredients

  • 1 lb (450 g) ground beef (80/20 blend)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp all-purpose flour
  • Optional substitutions: ground turkey, vegetable broth, gluten-free flour, yellow or white onions

Instructions

  1. Place ground beef in a bowl, season with salt and pepper, and gently combine. Form four 3/4-inch patties with a slight center indentation.
  2. Heat olive oil in a skillet over medium heat and add sliced onions, stirring to coat.
  3. Cook onions for 10 minutes until caramelized, then remove and set aside.
  4. Increase heat to medium-high and sear patties for 4–5 minutes per side without moving.
  5. Remove patties and tent with foil to rest.
  6. Reduce heat to medium, add garlic to drippings, and sauté for 30 seconds.
  7. Whisk flour into drippings, then slowly add beef broth and Worcestershire sauce, whisking until smooth to form gravy.

Notes

Do not overwork the ground beef to avoid tough patties. Avoid pressing patties while cooking to retain juices.
