- 8 flour or corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook ground beef and onion in a skillet for 5-7 minutes; drain excess fat.
- Add garlic, cumin, and chili powder; cook 1 minute more.
- Spoon 2-3 tablespoons of beef mixture into each tortilla and roll tightly.
- Place seam-side down in the baking dish.
