- 1 lb medium or large shrimp, peeled and deveined
- 1–2 ripe avocados, sliced or cubed
- 1 large ripe mango, diced
- 1/2 small red onion, finely diced
- 1 small jalapeño, deseeded if preferred
- 1/4 cup chopped fresh cilantro
- Zest and juice of 1 large lime
- 1 tbsp ground chili powder
- 1 tbsp olive oil
- Salt and black pepper to taste
- 1 tsp honey
- 2 cups cooked rice or quinoa
- Optional: Greek yogurt and mayonnaise for sauce
Instructions
- Combine mango, red onion, jalapeño, cilantro, lime juice, and salt to make salsa. Refrigerate to meld flavors.
- Pat shrimp dry, toss with chili powder, salt, and pepper.
- Heat olive oil over medium-high heat, cook shrimp 2-3 minutes per side until pink and opaque. Remove from heat.
- Whisk lime juice, chili powder, olive oil, honey, salt, and pepper. Add Greek yogurt and mayonnaise if desired. Adjust to taste.
- Divide rice or quinoa in bowls. Top with shrimp, avocado, and mango salsa. Drizzle lime-chili sauce over. Garnish with cilantro and lime wedges.
Notes
Use thawed shrimp and cook just until opaque to avoid rubbery texture. Assemble bowls fresh for best taste. Avocado is best added just before serving to prevent browning.
