Ingredients

Scale
  • 2 cups long-grain rice

  • 1 tablespoon olive oil (or butter)

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon smoked paprika

  • ½ teaspoon ground turmeric

  • 2 cups seafood stock (or chicken stock)

  • 1 cup white wine (optional for extra flavor)

  • 1 cup fresh shrimp, peeled and deveined

  • 1 cup mussels, scrubbed and debearded

  • 1 cup squid rings

  • 1 red bell pepper, sliced thinly

  • Fresh parsley for garnish

  • Lemon wedges for serving

Optional Substitutes:

  • Seafood stock can be replaced with vegetable stock for a lighter option.

  • Shrimp can be substituted with scallops or crab meat.

  • For a spicier version, add cayenne pepper or chili flakes.

Instructions

  1. Prepare the Rice:

    • Rinse rice under cold water until it runs clear to remove excess starch.

    • Heat 1 tablespoon olive oil or butter in a large skillet or Dutch oven over medium heat. Add rice and toast it for about 2-3 minutes, stirring occasionally.

  2. Sauté Aromatics:

    • Add the finely chopped onion and minced garlic to the pan. Sauté for 2-3 minutes, until fragrant and translucent.

  3. Add Spices and Liquids:

    • Stir in smoked paprika and ground turmeric to coat the rice evenly. Add the seafood stock and white wine, bringing the mixture to a simmer. Cook for about 10 minutes, allowing some of the liquid to reduce.

  4. Cook the Seafood:

    • Add shrimp, mussels, and squid rings to the pan. Cover with a lid and cook for 10-12 minutes until the seafood is fully cooked.

  5. Add Vegetables and Finish Cooking:

    • Stir in the sliced red bell pepper and cook for an additional 2-3 minutes, allowing it to soften. Remove from heat once the rice is tender and the seafood is fully cooked.

  6. Garnish and Serve:

    • Garnish with freshly chopped parsley and serve with lemon wedges for an extra burst of flavor.

Notes

  • This dish is naturally gluten-free and can be modified by using brown rice for added fiber.

  • Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen for up to 1 month. Reheat with a splash of water or stock to prevent it from drying out.
