This roasted delicata squash recipe delivers caramelized, sweet, and nutty squash slices in just 30 minutes. With its edible skin and quick prep time, delicata squash makes a perfect, nutrient-packed fall side dish.

- 2 lbs delicata squash (2 medium squash), washed and trimmed
- 1 tbsp olive oil (or avocado oil)
- 2 tbsp brown sugar (or coconut sugar)
- 1/2 tbsp pure maple syrup
- 1 tsp balsamic vinegar
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp black pepper
- 1/8 tsp each: paprika, garlic powder, dried thyme
- Pinch cayenne pepper (optional)
- Optional substitutions: honey, sage, smoked paprika
Instructions
- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
- Wash squash, trim ends, slice lengthwise, and scoop seeds. Slice into 3/4-inch half-moons.
- Whisk glaze ingredients: brown sugar, maple syrup, balsamic vinegar, salt, cinnamon, pepper, paprika, garlic powder, thyme, and cayenne.
- Toss squash slices in glaze until evenly coated. Reserve some glaze.
- Arrange in single layer on baking sheet. Roast 15 minutes.
- Brush with reserved glaze, flip slices, and roast 15–20 minutes more until golden and tender (internal temp 205°F).
- Serve hot, garnished with herbs if desired.
Notes
Maintain uniform 3/4-inch slices for even cooking. Avoid overcrowding the pan to ensure caramelization. Apply glaze in two stages to prevent burning and maximize flavor.
