  • 34 ripe peaches, sliced into wedges
  • 2 balls (8 oz) fresh burrata cheese
  • 4 cups arugula or mixed greens
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/4 cup toasted pecans or walnuts
  • 1/4 cup fresh basil leaves, torn
  • 1 small shallot, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze or vinegar
  • Salt and freshly cracked black pepper, to taste
  • Optional add-ins: prosciutto, raspberries, or grilled bread

Instructions

  1. Place arugula or mixed greens on a large platter or in a salad bowl. Toss with a drizzle of olive oil and a pinch of salt.
  2. Slice peaches into wedges. Grill on a hot grill or grill pan for 2–3 minutes per side until light grill marks appear (optional).
  3. Arrange sliced peaches, cherry tomatoes, and shallots over the greens. Tear burrata into large pieces and distribute evenly.
  4. Sprinkle toasted pecans or walnuts and torn basil leaves over the salad.
