Ingredients

  • 1 cup sushi rice
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons sriracha sauce
  • 1 tablespoon mayonnaise
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • Salt to taste
  • Nori sheets, cut into strips

Instructions

  1. Rinse 1 cup of sushi rice until water runs clear, then cook according to package instructions. Mix with rice vinegar, sugar, and salt. Let cool.
  2. In a bowl, mix shrimp with sriracha and mayonnaise. If raw, sauté for 3–4 minutes until pink.
  3. Using a mold or ring, layer sushi rice, shrimp mix, avocado, and cucumber. Repeat for height.
  4. Carefully remove the mold and garnish with nori strips. Serve immediately.

Notes

Best served fresh. Adjust sriracha to your spice preference. For a healthy twist, substitute brown or cauliflower rice.
