Ingredients

- 1 cup sushi rice
- 1 lb shrimp, peeled and deveined
- 2 tablespoons sriracha sauce
- 1 tablespoon mayonnaise
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- Salt to taste
- Nori sheets, cut into strips
Instructions
- Rinse 1 cup of sushi rice until water runs clear, then cook according to package instructions. Mix with rice vinegar, sugar, and salt. Let cool.
- In a bowl, mix shrimp with sriracha and mayonnaise. If raw, sauté for 3–4 minutes until pink.
- Using a mold or ring, layer sushi rice, shrimp mix, avocado, and cucumber. Repeat for height.
- Carefully remove the mold and garnish with nori strips. Serve immediately.
Notes
Best served fresh. Adjust sriracha to your spice preference. For a healthy twist, substitute brown or cauliflower rice.
