Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes in a single layer and cook until golden and fork-tender, stirring occasionally.
- Remove potatoes from skillet and set aside.
- Add onion and bell pepper to the same skillet and sauté until softened.
- Add minced garlic and cook briefly until fragrant.
- Add ground turkey and cook, breaking it apart, until browned and fully cooked.
- Season with smoked paprika, thyme, salt, pepper, and optional chili flakes.
- Return potatoes to the skillet and stir to combine.
- Cook for an additional 2–3 minutes until flavors meld.
- Garnish with fresh parsley and serve.
