A quick and delightful homemade jam capturing the summery sweetness of peaches, perfect for spreading, topping, or gifting.
Ingredients

- 4 cups chopped ripe peaches (about 3 pounds)
- 3 to 5 1/2 cups granulated sugar (adjust to taste)
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon butter (optional, reduces foaming)
- Optional: cinnamon, nutmeg, or vanilla extract
Instructions
- Peel, pit, and chop the peaches. For easy peeling, blanch them in boiling water for 30 seconds and then transfer to ice water.
- In a large pot, combine peaches, lemon juice, and sugar. Stir and let sit for 10–15 minutes.
- Bring mixture to a boil over medium-high heat, stirring constantly. Add butter if using. Once boiling, reduce heat and simmer for 20–30 minutes until thickened. Mash or blend for desired texture.
- Test set by placing a spoonful on a chilled plate. If it wrinkles when pushed, it’s ready.
- Ladle hot jam into sterilized jars, leaving 1/4 inch headspace. Wipe rims, seal, and process in boiling water bath for 10 minutes, or refrigerate if consuming soon.
Notes
Use ripe peaches for optimal flavor. For no-pectin version, cook longer with lemon juice to thicken. Add a cinnamon stick or splash of brandy for variations.
