Ingredients

  • 1 lb ground beef (or ground turkey/plant-based crumbles)
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups beef broth (or vegetable broth)
  • 2 medium potatoes, peeled and cubed
  • 1 cup frozen corn
  • 1 cup green beans, trimmed and cut
  • 1 tsp dried oregano (or Italian seasoning)
  • 1 tsp Worcestershire sauce (or soy sauce)
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Optional garnishes: fresh parsley or shredded cheddar

Instructions

  1. Heat olive oil in a Dutch oven or large pot. Sauté onion, carrots, and celery for 5-7 minutes until softened.
  2. Add ground beef and garlic. Cook 6-8 minutes until browned. Drain excess fat.
  3. Stir in diced tomatoes, broth, Worcestershire sauce, oregano, salt, and pepper. Bring to a boil, then reduce to simmer.
  4. Add potatoes, corn, and green beans. Simmer uncovered 20-25 minutes until potatoes are tender and flavors meld.
  5. Remove from heat, let rest 5 minutes, then serve hot. Garnish with parsley or cheese if desired.
