- 1 tablespoon olive oil
- 1 pound ground beef (or ground turkey/Italian sausage)
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon dried Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- 1 (24-ounce) jar marinara or pasta sauce
- 4 cups beef broth (or chicken/vegetable broth)
- 2 cups water
- 8 ounces lasagna noodles, broken into bite-sized pieces
- 1 cup fresh spinach (optional)
- 1 cup ricotta cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Instructions
- Heat olive oil in a large pot. Brown ground beef until fully cooked, then add onion and garlic. Cook 3-4 minutes until fragrant.
- Stir in Italian seasoning and red pepper flakes, then add marinara sauce, beef broth, and water. Bring to a simmer.
- Add broken lasagna noodles and cook 10-12 minutes until tender. Stir in spinach and cook 2 minutes.
- Reduce heat to low. Stir in ricotta and mozzarella until creamy, then add Parmesan. Season with salt and pepper.
- Serve hot, garnished with extra ricotta and fresh basil.
Notes
Add pasta only when broth is simmering to avoid mushy texture. Reduce heat before adding cheeses to prevent separation.
