- 454 g lean ground beef (or ground turkey for a lighter version)
- 4–6 medium Russet potatoes (or Yukon Golds as an alternative)
- 28 g taco seasoning (low-sodium or homemade)
- 120 ml water
- 120 g sharp cheddar cheese, shredded
- 120 ml sour cream or Greek yogurt
- 25 g green onions, chopped
- 85 g fresh tomatoes, diced
Instructions
- Preheat the oven to 200°C (400°F). Wash and scrub the potatoes thoroughly, pierce each one several times with a fork, rub with olive oil, and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for 45–50 minutes until tender.
- While potatoes bake, heat a skillet over medium heat. Add ground beef and cook for 5–7 minutes until browned. Drain excess fat.
- Stir in taco seasoning and 120 ml water. Simmer for 5 minutes until thickened.
- Slice baked potatoes lengthwise and fluff the insides with a fork.
- Spoon the taco beef mixture over each potato.
- Top with shredded cheddar cheese, a dollop of sour cream, chopped green onions, and diced tomatoes.
- Serve immediately while hot and cheesy.
Notes
For extra crispiness, rub potatoes with olive oil before baking. For a healthier version, use ground turkey and Greek yogurt. Perfect for family dinners or taco nights!
