- 4 cups broccoli florets, chopped
- 1 large Honeycrisp apple, diced with skin
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans or walnuts (toasted, optional)
- 1/4 cup red onion, finely diced
- 1/2 cup shredded sharp cheddar cheese (optional)
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Wash and dry broccoli thoroughly. Chop into bite-sized pieces.
- Dice Honeycrisp apple into small cubes, leaving skin on. Finely dice red onion.
- Toast nuts in a skillet over medium heat for 2-3 minutes until fragrant (optional).
- In a large mixing bowl, combine broccoli, apple, cranberries, nuts, onion, and cheese (if using).
- In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
- Pour dressing over salad ingredients and gently toss until evenly coated.
- Refrigerate at least 30 minutes before serving for best flavor and texture.
Notes
Use Honeycrisp apples for crunch and sweetness, but Gala, Fuji, or Braeburn also work. Chill for at least 30 minutes to let flavors meld. For lighter dressing, replace half the mayo with Greek yogurt.
