- 6 large ripe nectarines, sliced
- 1/4 cup granulated sugar
- 1 1/2 tablespoons cornstarch
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract (optional)
- 1 cup old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/3 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 8 tablespoons cold unsalted butter, cut into pieces
- Optional: 1/2 cup chopped nuts
- Optional: 1/2 cup berries
Instructions
- Preheat the oven to 350°F (175°C).
- Wash, pit, and slice the nectarines. Peel if desired.
- In a bowl, toss nectarines with granulated sugar, cornstarch, lemon juice, and vanilla. Spread into greased 9-inch baking dish.
- In a separate bowl, mix oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add butter and blend until crumbly.
- Fold in optional nuts or berries if using.
- Evenly sprinkle topping over fruit mixture.
- Bake 30–50 minutes, until golden and bubbling. Cover loosely with foil if topping browns too quickly.
- Cool for 10–15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
Notes
Swap nectarines with peaches or a mix of stone fruits. For gluten-free, use GF oats and almond flour. Vegan? Sub butter with coconut oil.
