Ingredients
4 bone-in, skin-on chicken thighs
2 tbsp olive oil
2 tbsp lemon juice
4 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
2 sprigs fresh thyme
1 sprig fresh rosemary
1 cup chicken broth
1/2 cup heavy cream
2 tbsp butter
1/4 cup grated Parmesan cheese
Instructions
Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Add chicken thighs and massage the marinade into the meat. Let it sit for at least 20 minutes, or refrigerate for up to 2 hours.
Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Add chicken thighs, skin-side down, and sear for 4-5 minutes until golden and crispy. Flip the chicken over and cook for an additional 3 minutes.
Create the Sauce: Remove the chicken from the skillet and set aside. In the same skillet, add chicken broth, heavy cream, butter, and Parmesan cheese. Stir and simmer for 5 minutes until the sauce thickens.
Cook the Chicken in Sauce: Return the chicken to the skillet, skin-side up, and pour any leftover marinade over the chicken. Add thyme and rosemary sprigs. Cover and simmer for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F.
Serve: Remove from heat and sprinkle with extra Parmesan, if desired. Serve with roasted vegetables, mashed potatoes, or a green salad.
Notes
You can substitute chicken breasts for thighs, but thighs provide a juicier result.
For a dairy-free version, use coconut cream instead of heavy cream and opt for dairy-free butter and Parmesan.
Marinate the chicken for longer for deeper flavor infusion.
