- 2 cups mashed potatoes (room temperature)
- 1 cup shredded cheese (Cheddar, Monterey Jack, or blend)
- 2 large eggs
- 1/4 cup all-purpose or gluten-free flour
- 1/4 cup chopped green onions or chives
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 teaspoon baking powder (optional)
- Butter or cooking spray (for greasing)
- Optional: Bacon bits, sautéed onions, fresh herbs like parsley
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a mini muffin tin.
- In a large bowl, combine mashed potatoes, eggs, cheese (reserving some for topping), flour, baking powder, garlic powder, salt, and pepper. Fold in green onions or chives.
- Fill muffin cups about 3/4 full and gently press mixture down. Top with reserved cheese.
- Bake 15-25 minutes until golden brown and puffed.
- Cool 5 minutes before removing. Serve warm with chives and sour cream if desired.
Notes
Warm mashed potatoes slightly before mixing for better blending. Use an air fryer to reheat leftovers for best texture.
