This creamy and comforting Marry Me Chicken Soup combines tender chicken, sun-dried tomatoes, Italian herbs, and Parmesan in a rich broth, perfect for cozy fall evenings.

- 1 teaspoon olive oil
- 1–1½ pounds boneless, skinless chicken breasts or thighs, diced
- 2 teaspoons Italian seasoning, divided
- Salt and freshly ground black pepper to taste
- ½ cup diced carrots
- ½ cup diced celery
- ½ cup diced onions
- ¼ cup sun-dried tomatoes, diced
- 3 garlic cloves, minced
- ¼ cup all-purpose flour
- 2 tablespoons tomato paste (optional)
- 6–8 cups chicken broth
- 6 oz small pasta shells or ditalini
- 1 cup heavy whipping cream
- ½–1 cup grated Parmesan Reggiano cheese
- 2½–3 cups fresh spinach
Instructions
- Heat olive oil in a large pot over medium-high heat. Season chicken with 1 tsp Italian seasoning, salt, and pepper. Sear for 4-5 minutes until golden, then remove and set aside.
- Add onions, carrots, celery, sun-dried tomatoes, and garlic to the same pot. Cook for 3-4 minutes until softened and fragrant.
- Stir in flour and tomato paste if using, cooking for 30 seconds while stirring constantly.
- Slowly add chicken broth while scraping the bottom of the pot. Start with 6 cups for thicker consistency.
- Return chicken to the pot. Bring to boil, add pasta and remaining Italian seasoning. Cover and simmer for 20 minutes until chicken is tender and pasta al dente.
- Remove from heat. Stir in cream, spinach, and Parmesan. Let rest 5 minutes before serving.
Notes
To lighten the soup, use Greek yogurt or coconut milk instead of heavy cream, and substitute pasta with zucchini noodles or shirataki for a low-carb version.
