Ingredients

  • 1 pounds boneless, skinless chicken breasts or thighs, diced
  • 2 teaspoons Italian seasoning, divided
  • Salt and freshly ground black pepper to taste
  • ½ cup diced carrots
  • ½ cup diced celery
  • ½ cup diced onions
  • ¼ cup sun-dried tomatoes, diced
  • 3 garlic cloves, minced
  • ¼ cup all-purpose flour
  • 2 tablespoons tomato paste (optional)
  • 68 cups chicken broth
  • 6 oz small pasta shells or ditalini
  • 1 cup heavy whipping cream
  • ½1 cup grated Parmesan Reggiano cheese
  • 3 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season chicken with 1 tsp Italian seasoning, salt, and pepper. Sear for 4-5 minutes until golden, then remove and set aside.
  2. Add onions, carrots, celery, sun-dried tomatoes, and garlic to the same pot. Cook for 3-4 minutes until softened and fragrant.
  3. Stir in flour and tomato paste if using, cooking for 30 seconds while stirring constantly.
  4. Slowly add chicken broth while scraping the bottom of the pot. Start with 6 cups for thicker consistency.
  5. Return chicken to the pot. Bring to boil, add pasta and remaining Italian seasoning. Cover and simmer for 20 minutes until chicken is tender and pasta al dente.
  6. Remove from heat. Stir in cream, spinach, and Parmesan. Let rest 5 minutes before serving.

Notes

To lighten the soup, use Greek yogurt or coconut milk instead of heavy cream, and substitute pasta with zucchini noodles or shirataki for a low-carb version.
