  • 2 cups filtered water
  • 12 tablespoons raw honey
  • 1 fresh lemon (juiced)
  • 1 small piece fresh ginger (optional)

  • Stevia or monk fruit instead of honey
  • Lime juice instead of lemon
  • Coconut water instead of regular water
  • Fresh mint leaves for added flavor

Instructions

  1. Gently wash the lemon balm leaves and bruise them lightly to release their essential oils.
  2. Bring 2 cups of filtered water to a boil (200-212°F).
  3. Place the lemon balm leaves in a teapot or heat-resistant container and pour in the boiling water.
  4. Cover and steep for 8-10 minutes.
  5. Strain the liquid, then add lemon juice and honey while still warm.
  6. Grate and stir in fresh ginger if using. Serve hot or refrigerate for a chilled version.
