Description

  • 6 large russet potatoes, washed and sliced
  • 8 slices crispy bacon, crumbled
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup chopped green onions
  • 4 Tbsp olive oil
  • 1 tsp onion powder
  • 1 tsp paprika

Instructions

  • Prep the Potatoes

    • Rinse and slice the potatoes, keeping the skins on for extra texture.
    • Boil them in salted water until just tender (about 10–12 minutes). Drain well.
  • Assemble the Casserole

    • Preheat the oven to 425°F (220°C).
    • Arrange the boiled potatoes in a single layer in an 11×13 baking dish.
    • Drizzle with olive oil and sprinkle with onion powder, paprika, and salt.
    • Evenly distribute crumbled bacon and shredded cheddar cheese over the potatoes.
  • Bake

    • Place the casserole in the oven and bake for 10 minutes, or until the cheese is melted and bubbly.

 

  • Final Touches

    • Remove from the oven and garnish with fresh green onions.
    • Add dollops of sour cream before serving.
