- 1 ½ cups vegetable oil
- ¾ cup orange juice

For the Key Lime Cream Cheese Frosting:
- 1 (8-ounce) package cream cheese, softened
- ½ cup (1 stick) unsalted butter, softened
- 1 (1-pound) box confectioners’ sugar
- 2 tablespoons key lime juice
- 1 teaspoon grated lime zest
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large mixing bowl, combine the cake mix and lime-flavored gelatin.
- Add the eggs, oil, orange juice, lemon juice, key lime juice, and vanilla extract. Mix until the batter is smooth and well combined.
- Divide the batter evenly among the prepared cake pans.
- Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Prepare the Frosting:
- In a medium bowl, beat the softened cream cheese and butter until light and fluffy.
- Gradually add the confectioners’ sugar, mixing well after each addition.
- Stir in the key lime juice and grated lime zest until the frosting is smooth and creamy.
Assemble the Cake:
- Once the cake layers are completely cool, place one layer on a serving plate.
- Spread a portion of the frosting over the top of the first layer.
- Place the second layer on top and repeat the frosting process.
- Add the third layer and frost the top and sides of the cake.
- Garnish with additional lime zest or slices, if desired.
