  • 500g fresh mushrooms (shiitake, cremini, or button)
  • 3 tbsp miso paste (white or red)
  • 2 tbsp soy sauce
  • 2 tbsp toasted sesame oil
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp green onions, chopped (for garnish)
  • 1 tbsp toasted sesame seeds
  • Optional: chili flakes

Instructions

  1. Wipe mushrooms clean with a damp cloth. Slice evenly into halves or 1/2-inch slices.
  2. Heat sesame oil in large skillet over medium heat until shimmering.
  3. Add garlic and ginger. Sauté 1-2 minutes until fragrant.
  4. Add mushrooms. Stir-fry 5-7 minutes until golden brown and tender.
  5. Whisk miso paste, soy sauce, and 2 tbsp warm water in a bowl until smooth.
  6. Pour sauce over mushrooms. Stir and cook 2-3 minutes until evenly coated.
  7. Taste and adjust with extra soy sauce, miso, or chili flakes.
  8. Remove from heat. Garnish with green onions and sesame seeds.
  9. Serve warm as side dish or over rice/noodles.

Notes
