  • 3 tablespoons olive oil

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 1 teaspoon turmeric

  • 1 teaspoon paprika

  • 1/2 teaspoon cumin

  • 2 cups chicken or vegetable broth

  • Salt to taste

  • 1/4 teaspoon black pepper

  • 1 bay leaf

  • 1/2 cup frozen peas (optional)

  • Fresh parsley or cilantro for garnish (optional)


Instructions

  • Sauté the Aromatics: Heat olive oil in a large saucepan over medium heat. Add the chopped onion and garlic. Sauté for about 3-4 minutes, until the onion turns translucent and fragrant.

  • Add Spices: Stir in turmeric, paprika, and cumin. Allow the spices to cook for an additional 1-2 minutes, releasing their full aroma.

  • Toast the Rice: Add the uncooked rice to the pan, stirring to coat each grain in the spice mixture. Let it toast for 1-2 minutes, making sure not to burn it.

  • Add Broth and Cook: Pour in the chicken (or vegetable) broth, add the bay leaf, and season with salt and black pepper. Bring to a boil, then reduce the heat to low. Cover and simmer for 18-20 minutes, until the rice is tender and the liquid is absorbed.

  • Add Peas (Optional): If you’re using frozen peas, stir them into the rice 5 minutes before the rice is done cooking.

 

  • Fluff and Serve: Once the rice is cooked, remove the bay leaf and fluff the rice with a fork. Garnish with fresh parsley or cilantro for a pop of color.

Notes

  • For a richer flavor, use seafood broth instead of chicken broth.

  • You can add additional vegetables like bell peppers or zucchini for extra texture.
