Instructions
- Preheat oven to 425°F (220°C) and place a baking sheet inside while it heats. Line with parchment once hot.
- Peel sweet potatoes (optional) and cut into uniform ¼-inch thick fries.
- Soak fries in cold water for 30 minutes to remove excess starch. Drain and pat completely dry.
- Toss fries first with cornstarch (if using), then olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
- Arrange fries in a single layer on the preheated baking sheet, leaving space between pieces. Use two sheets if necessary.
- Bake for 15 minutes, flip fries, then bake another 10-15 minutes until golden and crispy.
- Let rest 2-3 minutes on the sheet to firm up before serving.
Notes
For flavor variations, try curry powder, cumin, or Italian herbs. Leave skins on for extra fiber. Use potato starch instead of cornstarch for similar crisping power. Fries can also be cooked in an air fryer at 380°F for 12-15 minutes.
