- 4 ounces feta cheese, crumbled (about 115g)
- 2 cloves garlic, minced

- 1 teaspoon red pepper flakes (optional)

Instructions
- Bring a pot of salted water to a boil. Add gnocchi and cook until they float, about 2–3 minutes. Remove with a slotted spoon and drain well.
- Heat olive oil in a large frying pan over medium-high heat until shimmering. Add cooked gnocchi in a single layer and cook undisturbed for 2–3 minutes until golden brown.
- Stir gently and cook another 2–3 minutes for even crispiness on all sides.
- Reduce heat to medium, add minced garlic, and sauté for 1 minute until fragrant.
- Add spinach and stir until wilted, about 2–3 minutes.
- Season with salt, black pepper, and red pepper flakes. Remove from heat and stir in crumbled feta.
- Serve immediately while warm and crispy.
