Description
A foolproof and flavor-packed homemade peach jam recipe using fresh peaches, pectin, lemon juice, and sugar. Perfect for canning or enjoying fresh!
Ingredients
Scale
- 4 cups peaches, peeled, pitted, and diced
- 1 box of Sure-Jell pectin (or 1.75 oz powdered pectin)
- 2 tablespoons lemon juice
- 5 cups granulated sugar
Instructions
- Combine diced peaches, pectin, and lemon juice in a large pot (4-quart or larger).
- Heat the mixture over medium-high, mashing and stirring until it becomes somewhat pureed.
- Bring to a strong boil, stirring constantly.
- Add all the sugar at once and stir until dissolved.
- Bring back to a full rolling boil and boil for 1 minute, stirring constantly.
- Remove from heat and skim off any foam.
- Ladle hot jam into prepared jars, leaving 1/2 inch headspace.
- Wipe rims clean, apply lids and rings fingertip-tight.
- Place jars in a boiling water bath canner for 5 minutes (half-pint) or 10 minutes (pint), adjusting for altitude.
- Remove jars and let cool undisturbed for 24 hours. Store in a cool, dark place.
Notes
Use ripe peaches for best flavor. For a lower-sugar version, reduce sugar to 4 cups and increase pectin. Makes approximately 8 half-pint jars.
