- 1/4 cup pure honey
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon ground cinnamon

- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly cracked black pepper
- Optional: fresh thyme leaves, chopped chives, or flaky sea salt for garnish
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Peel and cube sweet potatoes into 1-inch pieces. Toss with olive oil in a large mixing bowl.
- Whisk together melted butter, honey, cinnamon, nutmeg, salt, and pepper in a separate bowl.
- Pour honey butter mixture over sweet potatoes and toss until evenly coated.
- Arrange in a single layer on the prepared baking sheet without overcrowding.
- Roast 25-30 minutes, flipping halfway through, until golden brown and fork-tender.
- Remove from oven and garnish with fresh thyme or sea salt if desired. Serve hot.
Notes
Do not overcrowd the baking sheet to ensure crispiness. For dairy-free, substitute coconut oil or vegan butter. Use maple syrup instead of honey for variation.
