- 24 caramel squares (Kraft, Werther’s, or homemade)
- 24 round vanilla wafer cookies (Nilla Wafers or gluten-free alternative)
- 2 cups semi-sweet chocolate chips (or milk, dark, or white chocolate)
Instructions
- Preheat oven to 250°F. Line two baking sheets with parchment paper.
- Unwrap 24 caramels, place spaced on a sheet, and soften in oven for 5 minutes.
- Arrange vanilla wafer cookies bottom-side up on second sheet.
- Flatten softened caramels to cookie size and press onto cookies.
- Flash freeze assembled bites for 15 minutes.
- Melt 1 cup chocolate chips in microwave in 30-second intervals, stirring until smooth.
- Dip half the bites into melted chocolate using a fork, letting excess drip off. Place on parchment.
- Repeat with remaining bites and melted chocolate.
- Let coated bites set at room temperature for 15–20 minutes until firm.
Notes
Flash freezing is key to clean chocolate coating. Avoid refrigerating during setting to prevent chocolate bloom.
