Ingredients

  • 1/2 cup coconut cream
  • 1/2 cup white rum or coconut water
  • 1 cup crushed ice
  • 1 tablespoon simple syrup (optional)

  • Shredded coconut for garnish
  • Fresh mint leaves for garnish

Instructions

  1. Add pineapple juice, coconut cream, and rum (or coconut water) to a high-powered blender.
  2. Add frozen raspberries, crushed ice, and simple syrup if using.
  3. Blend on high for 30–60 seconds until smooth and creamy.
  4. Taste and adjust sweetness or thickness as needed.
  5. Pour into chilled glasses.
