Description

A rich, sweet, molasses-kissed brown bread inspired by Outback Steakhouse—soft, fluffy, and perfectly flavored with cocoa, honey, and whole wheat for that iconic taste.


Ingredients

  • 2¼ cups all-purpose flour
  • 1¾ cups whole wheat flour
  • 2 tablespoons unsweetened cocoa powder
  • 1½ teaspoons instant yeast
  • 1½ teaspoons salt
  • Cornmeal for dusting
  • 1¼ cups lukewarm water
  • ¼ cup vegan honey or pure maple syrup
  • 2 tablespoons molasses
  • 2 tablespoons neutral oil

Instructions

  1. Line a baking sheet with parchment paper and dust with cornmeal.
  2. Whisk together the all-purpose flour, whole wheat flour, cocoa powder, yeast, and salt.
  3. Mix lukewarm water, honey or maple syrup, molasses, and oil in a separate container.
  4. Combine wet and dry ingredients until a shaggy dough forms.
  5. Knead 8–10 minutes in a mixer or 12–15 minutes by hand until smooth and tacky.
  6. Place dough in an oiled bowl, cover, and rise 1.5 hours until doubled.
  7. Deflate dough, divide into 4 pieces, and shape into rolls.
  8. Let rolls rise 40 minutes until puffy; preheat oven to 350°F (175°C).
  9. Bake 30–35 minutes until golden and hollow-sounding on the bottom.
  10. Cool at least 20 minutes before slicing.

Notes

Use regular unsulfured molasses—not blackstrap—for the authentic sweet flavor. Keep the dough tacky for soft, fluffy rolls.
