Instructions

  1. Zest and juice the lemons. Use zest and juice to prepare lemon curd or use juice directly for a lighter version.
  2. Chill bowl and beaters. Whip the cream until soft peaks form. If using mascarpone, whip it with the cream.
  3. Whip egg whites or aquafaba with a pinch of sugar until stiff peaks form.
  4. Fold lemon mixture into whipped cream, then gently fold in egg whites or aquafaba. Fold slowly to keep mousse airy.
  5. Spoon into serving dishes or lemon shells. Chill at least 1 hour before serving.
