Ingredients

  • 2 very ripe bananas, mashed
  • 1 large egg
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1/3 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the egg, melted butter or coconut oil, and vanilla extract, then mix well.
  4. Stir in the oats, brown sugar, baking powder, cinnamon, and salt until just combined.
  5. Scoop spoonfuls of dough onto the prepared baking sheet and flatten slightly.
  6. Bake for 12 to 14 minutes until set and lightly golden on the edges.
  7. Remove from the oven and let cool for a few minutes before serving.

Notes

Use very ripe bananas for best sweetness and flavor. Do not overbake to keep cookies soft.
