- 1 large egg, room temperature
- ⅓ cup granulated sugar
- ¼ cup vegetable oil
- ¼ cup full-fat sour cream, room temperature
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- 1 cup powdered sugar, sifted
- 1 teaspoon vanilla extract (for glaze)
- 3 tablespoons milk (adjust consistency)
Instructions
- Preheat oven to 350°F and grease or line a loaf pan with parchment paper.
- Combine chopped apples, brown sugar, cinnamon, and ginger in a bowl and let sit to create a natural syrup.
- In a large bowl, whisk together egg, granulated sugar, oil, sour cream, and vanilla extract until smooth.
- In a separate bowl, mix flour, baking soda, and salt. Gently fold into wet mixture until nearly combined.
- Fold ¾ of the apple mixture into batter, reserving some for topping.
- Pour batter into prepared pan, top with remaining apples, and bake 50–55 minutes until golden and set (200°F internal temp).
- Cool in pan 30 minutes, then remove. For glaze, whisk powdered sugar, vanilla, and milk until smooth; drizzle over cooled bread.
Notes
Use firm apples for best texture. Ensure bread is completely cooled before glazing. Store wrapped at room temperature for 2 days or refrigerate up to 1 week. Freezes well up to 3 months.
