- 1 lb lean ground turkey or chicken
- 1 tbsp olive oil
- 1 packet taco seasoning (or homemade blend)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp cumin
- 1 (14.5 oz) can diced tomatoes
- 1 (10 oz) can green chilies (optional)
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup low-sodium chicken broth
- 8 oz cream cheese, cubed
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add ground turkey or chicken and cook 6–8 minutes until browned.
- Add taco seasoning, garlic powder, onion powder, cumin, salt, and pepper. Stir 1 minute until fragrant.
- Add diced tomatoes, green chilies, black beans, and chicken broth. Stir, scraping up browned bits. Bring to a simmer.
- Add cubed cream cheese, stirring 2–3 minutes until melted and creamy.
- Stir in shredded cheddar until melted and fully incorporated.
- Taste and adjust seasoning. Serve hot with desired toppings.
Notes
For lower calories, replace half the cream cheese with Greek yogurt. Make dairy-free with cashew cream and nutritional yeast. Add bell peppers, corn, or zucchini for more vegetables. Freezes well for up to 3 months.
