  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

Create restaurant-quality pineapple glazed salmon in under 30 minutes! This sweet and savory dish combines juicy, flaky salmon with a tropical pineapple glaze for a deliciously impressive meal perfect for weeknights or entertaining.

Ingredients

Scale
  • 4 salmon fillets (6 oz each, wild-caught preferred)
  • 1 tablespoon olive oil (extra virgin)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup packed light brown sugar (or coconut sugar)
  • 2 tablespoons low-sodium soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic (or 1/2 teaspoon garlic powder)
  • 1/2 teaspoon grated fresh ginger (optional)
  • 1 cup diced pineapple (fresh or well-drained canned)
  • 1 tablespoon chopped fresh parsley (or cilantro/green onions for garnish)

Optional Substitutions: Replace soy sauce with coconut aminos, use honey or maple syrup instead of brown sugar, or substitute pineapple with mango or peach for variation.

Instructions

  1. Preheat the Oven: Set oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. Prepare the Glaze: Whisk together brown sugar, soy sauce, rice vinegar, garlic, and ginger until sugar dissolves. Set aside.
  3. Season the Salmon: Pat salmon fillets dry with paper towels. Rub with olive oil and season both sides with salt and pepper.
  4. Arrange in Baking Dish: Place salmon fillets in the dish, leaving space between each piece.
  5. Add Glaze and Pineapple: Spoon two-thirds of the glaze over the salmon. Scatter diced pineapple around and slightly on top of the fillets.
  6. Bake: Bake for 12–15 minutes, until salmon flakes easily and is opaque throughout. Begin checking at 10 minutes.
  7. Optional Broil: For extra caramelization, broil 1–2 minutes at the end—watch closely to prevent burning.
  8. Rest and Serve: Let rest 5 minutes before serving. Garnish with parsley and spoon over caramelized glaze and pineapple.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months. Reheat gently in a 350°F oven for 8–10 minutes or microwave at 50% power to avoid overcooking.
