- 1 1/2 lb boneless skinless chicken breast or thighs, cubed
- 2 cups pineapple chunks, fresh or canned in juice and drained
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
Instructions
- Cut chicken into bite-sized cubes and mince the garlic.
- Heat vegetable oil in a large skillet over medium heat.
- Add chicken and cook for 5–7 minutes until lightly browned.
- In a bowl, whisk soy sauce, brown sugar, garlic, cornstarch, and 2 tablespoons water.
- Pour sauce over chicken and stir to combine.
- Add pineapple chunks and simmer for 8–10 minutes until chicken is cooked through and sauce thickens.
- Remove from heat and let rest briefly before serving.
Notes
Drain pineapple well to avoid excess liquid. Cook chicken to an internal temperature of 165°F for best results.
