Ingredients

  • 1 1/2 lb boneless skinless chicken breast or thighs, cubed
  • 2 cups pineapple chunks, fresh or canned in juice and drained
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil

Instructions

  1. Cut chicken into bite-sized cubes and mince the garlic.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Add chicken and cook for 5–7 minutes until lightly browned.
  4. In a bowl, whisk soy sauce, brown sugar, garlic, cornstarch, and 2 tablespoons water.
  5. Pour sauce over chicken and stir to combine.
  6. Add pineapple chunks and simmer for 8–10 minutes until chicken is cooked through and sauce thickens.
  7. Remove from heat and let rest briefly before serving.

Notes

Drain pineapple well to avoid excess liquid. Cook chicken to an internal temperature of 165°F for best results.
