- 4 boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1 cup pineapple juice
- 1 cup crushed pineapple, drained
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh pineapple slices (optional)
- Fresh chopped cilantro (optional)
Instructions
- In a large bowl, mix BBQ sauce, pineapple juice, crushed pineapple, soy sauce, olive oil, garlic, onion powder, salt, and black pepper.
- Add chicken breasts to the marinade and coat well.
- Cover and refrigerate for at least 2 hours or overnight for best flavor.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Grill chicken for 5–7 minutes per side, basting with reserved marinade, until internal temperature reaches 165°F.
- Grill pineapple slices for 2–3 minutes per side if using.
- Remove chicken from grill, rest for 5 minutes, garnish, and serve.
Notes
Do not marinate longer than 24 hours, as pineapple can overly tenderize the chicken. Use low-sugar BBQ sauce for a healthier option.
