- 1 can (15 oz) chickpeas, drained and rinsed
- 1 medium cucumber, diced
- 1/4 cup finely chopped red onion
- 1 pint cherry tomatoes, halved
- 4 oz crumbled feta cheese
- 1/2 cup halved Kalamata olives
- 1/4 cup chopped fresh parsley
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Combine chickpeas, cucumber, red onion, tomatoes, feta, and Kalamata olives in a large bowl.
- Add chopped parsley and distribute evenly.
- Whisk olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
- Pour dressing over salad and toss gently.
- Taste and adjust seasoning as needed.
- Serve immediately or chill 20–30 minutes to allow flavors to meld.
Notes
For best results, chill the salad before serving. Rinse chickpeas thoroughly to remove excess sodium.
