Instructions

  1. Soak 1 cup of pitted Medjool dates in hot water for 10 minutes.
  2. Drain the dates, then blend with almond butter and melted coconut oil until smooth.
  3. Spread the caramel mixture evenly into a parchment-lined 9×5 loaf pan and freeze for 2–3 hours.
  4. Slice the firm caramel into 12 equal squares.
  5. Melt chocolate with coconut oil in 30-second intervals until smooth.
  6. Dip each caramel square into the melted chocolate and place on parchment paper.
  7. Refrigerate for 1 hour until fully set.

Notes
