- 12 oz Medjool dates, pitted
- 2/3 cup boiling water
- 3/4 cup peanut butter (or almond, cashew, or sunflower butter)
- 2 tbsp flaxmeal (or ground chia seeds)
- 1/2 cup unsweetened cocoa powder
- 1/4 cup oat flour
- 3/4 tsp baking soda
- 1 tsp vanilla extract
- 1/2 cup dark chocolate chips
- Sea salt flakes (optional)
Instructions
- Preheat oven to 350°F (180°C) and line a 9-inch square pan with greased parchment paper.
- Place pitted dates in a bowl and cover with boiling water; soak for 10 minutes.
- Transfer dates and liquid to a food processor. Add peanut butter, flaxmeal, and baking soda; blend until smooth.
- Add oat flour, cocoa powder, and vanilla; blend again into a thick chocolate batter.
- Fold in chocolate chips using short pulses.
- Spread batter into pan. Place a lightly oiled piece of parchment on top and press smooth.
- Bake 25–30 minutes until the surface is dry with slight cracks.
- Cool 10 minutes in pan, then fully on a rack before slicing.
Notes
For smoother brownies, ensure dates are fully softened. Cooling completely creates cleaner slices and enhances flavor.
