Beef Filling
- 1 lb ground beef (80/20 recommended)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup tomato sauce or salsa
Assembly
- 1 cup shredded cheese (cheddar, mozzarella, or Mexican blend)
- 10–12 small flour or corn tortillas
- Cooking spray or oil
- Fresh cilantro or green onions (garnish)
- Sour cream, guacamole, or salsa for serving
Instructions
- Heat a skillet over medium-high heat. Cook ground beef and onion until browned and softened.
- Add garlic, chili powder, cumin, paprika, salt, and pepper. Drain excess grease and stir well.
- Stir in tomato sauce and cook for 2 minutes until slightly thickened.
- Remove from heat and stir in shredded cheese until melted.
- Preheat oven to 425°F (220°C).
- Warm tortillas in microwave for 30 seconds to make them pliable.
- Spoon filling onto tortillas and roll tightly. Place seam-side down on baking sheet.
- Lightly spray or brush with oil and bake for 15–20 minutes until crispy and golden.
- Garnish and serve with dipping sauces.

Warm tortillas before rolling to prevent cracking and avoid overfilling for best crispiness.
