- 3 tablespoons hoisin sauce
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons honey
- 1 tablespoon Shaoxing wine or dry sherry
- 2 teaspoons sesame oil
- 1 teaspoon Chinese five-spice powder
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1/2 teaspoon fresh ginger, grated
- 1/4 teaspoon red food coloring (optional)
Instructions

- Add chicken thighs and coat evenly with marinade.
- Cover and refrigerate for at least 4 hours or overnight.
- Preheat oven to 400°F and line a baking tray with foil and a wire rack.

- Bake for 25–30 minutes, basting every 10 minutes.

- Rest for 5 minutes, slice, and serve.
Notes
Basting regularly helps build the signature glossy char siu glaze. Watch closely while broiling to prevent burning.
