Ingredients

  • 1 (15 oz) can black beans, drained and rinsed
  • 2 large eggs
  • 1/3 cup melted coconut oil or butter
  • 1/2 cup unsweetened cocoa powder
  • 2/3 cup coconut sugar or brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips
  • Optional: extra chocolate chips for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. Add black beans, eggs, melted coconut oil, cocoa powder, coconut sugar, vanilla, baking powder, and salt to a food processor. Blend 60–90 seconds until completely smooth.
  3. Transfer batter to a bowl and fold in chocolate chips.
  4. Pour into prepared pan and smooth the top. Sprinkle extra chocolate chips if desired.
  5. Bake 22–25 minutes until a toothpick comes out with moist crumbs.
  6. Cool 15–20 minutes before slicing into nine squares.
