  • 3 carrots, sliced
  • 2 potatoes, diced

Instructions

  3. Stir in carrots, potatoes, and celery. Cook 2–3 minutes.
  4. Pour in beef broth; bring to boil, then reduce heat and simmer covered 20–25 minutes.
  5. Add diced tomatoes, basil, oregano, salt, pepper, and paprika. Stir well.
  6. Add green beans and corn; simmer uncovered 10–15 minutes until tender.
  7. Taste and adjust seasoning. Rest 2–3 minutes off heat before serving.

Notes

For extra heartiness, mash some potatoes into the broth or add a cornstarch slurry. Frozen vegetables work well—add them at the appropriate stages.
