- 1 lb ground beef (80/20 blend)
- 2 tbsp olive oil
- 4 cups beef broth (low-sodium recommended)
Aromatic Foundation:
- 1 medium onion, chopped
- 2 cloves garlic, minced
Vegetable Medley:
- 3 carrots, sliced
- 2 potatoes, diced
- 1 cup celery, chopped
- 1 cup green beans, chopped
- 1 cup corn kernels
- 1 can (14.5 oz) diced tomatoes
Seasoning Blend:
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ tsp paprika
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook 6–8 minutes until browned. Drain excess fat, leaving about 1 tbsp.
- Add onion and garlic; cook 3–4 minutes until fragrant.
- Stir in carrots, potatoes, and celery. Cook 2–3 minutes.
- Pour in beef broth; bring to boil, then reduce heat and simmer covered 20–25 minutes.
- Add diced tomatoes, basil, oregano, salt, pepper, and paprika. Stir well.
- Add green beans and corn; simmer uncovered 10–15 minutes until tender.
- Taste and adjust seasoning. Rest 2–3 minutes off heat before serving.
Notes
For extra heartiness, mash some potatoes into the broth or add a cornstarch slurry. Frozen vegetables work well—add them at the appropriate stages.
