A perfect summer salad made with smoky-sweet grilled peaches, creamy burrata, toasted nuts, and fresh basil—this grilled peach burrata salad is a quick, gourmet-level dish that’s as satisfying as it is refreshing.

  • 4 ripe but firm peaches, halved and pitted
  • 8 oz burrata cheese, drained and patted dry
  • 1 tablespoon avocado oil or other neutral oil
  • 2 ounces prosciutto, torn into pieces (optional)
  • Handful of fresh basil leaves, roughly torn
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon white balsamic vinegar or balsamic vinegar
  • Flaky sea salt and freshly ground black pepper to taste
  • 1/4 cup pine nuts or chopped pistachios, toasted

Instructions

  1. Preheat grill or grill pan to medium-high heat (about 500°F / 260°C). Slice peaches in half, remove pits, and brush cut sides with avocado oil. Season lightly with salt and pepper.
  2. Place peaches cut side down on the grill and cook for 3–4 minutes without moving. Flip and grill another 2–3 minutes on the skin side. Remove and cool slightly.
  3. Arrange salad greens on a platter and whisk together olive oil, white balsamic, salt, and pepper. Toss greens with half the dressing.
  4. Tear burrata into chunks and distribute over greens. Add grilled peaches, prosciutto (if using), toasted nuts, and basil leaves.
  5. Drizzle remaining dressing and optionally finish with honey or balsamic glaze. Serve immediately.

Notes

Use firm peaches to avoid mushiness on the grill. Serve burrata at room temperature for optimal creaminess. Dress the salad just before serving to maintain crisp texture.
