Elevate your backyard barbecue with these Grilled Cowboy Butter Chicken Skewers – tender chicken cubes marinated in a bold, herbaceous cowboy butter and grilled to juicy perfection.

  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cloves garlic, minced or 2 tsp garlic powder
  • 2 tbsp fresh parsley or 2 tsp dried parsley
  • 1 tbsp fresh chives
  • 1 tbsp fresh thyme or 1 tsp dried thyme
  • 1 tbsp fresh rosemary or 1 tsp dried rosemary
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • 2 tsp smoked paprika
  • 1 tsp cayenne pepper (adjust to taste)
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 lbs boneless, skinless chicken breasts or thighs, cubed
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large green bell pepper, cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces
  • 1215 wooden or metal skewers

Instructions

  1. Mix all cowboy butter ingredients in a bowl until smooth and well blended. Set aside 1/4 cup for basting.
  2. Place chicken cubes in a large bowl and coat with half of the remaining cowboy butter. Marinate for at least 20 minutes, ideally 2-4 hours.
  3. Cut vegetables into uniform pieces. If using wooden skewers, soak them for 30 minutes. Thread chicken, peppers, and onion onto skewers alternately.
  4. Preheat grill to medium-high heat (375-400°F), clean and oil the grates.
  5. Grill skewers for 12-15 minutes, turning every 3-4 minutes. Baste with reserved cowboy butter in the last 5 minutes. Cook until chicken reaches 165°F.
  6. Transfer skewers to a platter, rest for 3-5 minutes, then drizzle with melted remaining cowboy butter before serving.

Notes

For a leaner option, use chicken breast or firm tofu. Reduce cayenne for a kid-friendly version. Marinate overnight for deeper flavor.
