- 1 cup (2 sticks) unsalted butter, softened
- 4 cloves garlic, minced or 2 tsp garlic powder
- 2 tbsp fresh parsley or 2 tsp dried parsley
- 1 tbsp fresh chives
- 1 tbsp fresh thyme or 1 tsp dried thyme
- 1 tbsp fresh rosemary or 1 tsp dried rosemary
- 1 tbsp Dijon mustard
- 1 tbsp honey or maple syrup
- 2 tsp smoked paprika
- 1 tsp cayenne pepper (adjust to taste)
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
- 2 lbs boneless, skinless chicken breasts or thighs, cubed
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large green bell pepper, cut into 1-inch pieces
- 1 large red onion, cut into 1-inch pieces
- 12–15 wooden or metal skewers
Instructions
- Mix all cowboy butter ingredients in a bowl until smooth and well blended. Set aside 1/4 cup for basting.
- Place chicken cubes in a large bowl and coat with half of the remaining cowboy butter. Marinate for at least 20 minutes, ideally 2-4 hours.
- Cut vegetables into uniform pieces. If using wooden skewers, soak them for 30 minutes. Thread chicken, peppers, and onion onto skewers alternately.
- Preheat grill to medium-high heat (375-400°F), clean and oil the grates.
- Grill skewers for 12-15 minutes, turning every 3-4 minutes. Baste with reserved cowboy butter in the last 5 minutes. Cook until chicken reaches 165°F.
- Transfer skewers to a platter, rest for 3-5 minutes, then drizzle with melted remaining cowboy butter before serving.
Notes
For a leaner option, use chicken breast or firm tofu. Reduce cayenne for a kid-friendly version. Marinate overnight for deeper flavor.
