- 1.5 teaspoons smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 tablespoon fresh cilantro, finely minced
- 60 g crumbled feta or cotija cheese
- 1 tablespoon fresh lime juice
- 1 teaspoon chipotle or chili powder (optional for extra heat)
Instructions
- Preheat grill to medium-high (400–450°F) and lightly oil the grates.
- Brush each corn cob with olive oil, season with salt and pepper.
- Grill corn 10–15 minutes, turning every 3–4 minutes until evenly charred and tender.
- In a bowl, whisk mayonnaise, sour cream, Cajun seasoning, smoked paprika, onion powder, and garlic powder until smooth.
