Ingredients

  • 2 to 3 ripe peaches, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice and zest of 1 lime
  • Sea salt to taste
  • Optional: cherry tomatoes, corn kernels, black beans, or mango

Instructions

  1. Wash and dry all produce. Dice the peaches into chunks. Finely dice red bell pepper, red onion, and jalapeño. Chop cilantro and zest the lime.
  2. Combine diced peaches, bell pepper, onion, jalapeño, and cilantro in a mixing bowl. Add lime juice and zest, and season with sea salt. Gently toss to mix.
  3. Cover and refrigerate for 15-20 minutes to let flavors meld.
  4. Serve chilled with chips or as a topping for tacos, grilled meats, or salads.

Notes

Use ripe but firm peaches for best texture. Adjust jalapeño seeds to control heat. Salsa keeps well refrigerated for up to 5 days but is best within 2-3 days.
