Ingredients

- 2 to 3 ripe peaches, diced
- 1/2 red bell pepper, diced
- 1/4 cup red onion, finely diced
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice and zest of 1 lime
- Sea salt to taste
- Optional: cherry tomatoes, corn kernels, black beans, or mango
Instructions
- Wash and dry all produce. Dice the peaches into chunks. Finely dice red bell pepper, red onion, and jalapeño. Chop cilantro and zest the lime.
- Combine diced peaches, bell pepper, onion, jalapeño, and cilantro in a mixing bowl. Add lime juice and zest, and season with sea salt. Gently toss to mix.
- Cover and refrigerate for 15-20 minutes to let flavors meld.
- Serve chilled with chips or as a topping for tacos, grilled meats, or salads.
Notes
Use ripe but firm peaches for best texture. Adjust jalapeño seeds to control heat. Salsa keeps well refrigerated for up to 5 days but is best within 2-3 days.
