Ingredients
Scale
- 2 pounds fresh, ripe figs (Black Mission, Brown Turkey, or Kadota)
- 1 cup granulated sugar
- ¼ cup fresh lemon juice
- ¼ cup water
Instructions
- Wash and dry the figs, remove stems, and cut into small pieces.
- In a bowl, mix figs and sugar and let sit for 30 minutes to draw out juices.
- Transfer to a saucepan, add lemon juice and water, and bring to a gentle boil over medium heat.
- Simmer for 30-45 minutes, stirring occasionally and mashing larger pieces until jam thickens and coats the back of a spoon.
- Perform the wrinkle test with a chilled plate to check consistency. Remove from heat and skim foam.
- Transfer to sterilized jars, leaving ¼-inch headspace, and store appropriately.
Notes
Use ripe, fresh figs for best results. Add cinnamon, orange zest, or vanilla for extra depth. Store in fridge for 3 months or freeze up to a year.
