  • 1/4 teaspoon ground black pepper
  • 2 medium ripe avocados, chopped
  • 1 cup cherry tomatoes, halved
  • Fresh kernels from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeño, diced
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Whisk together olive oil, lime juice and zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle (optional), and pepper.
  2. Rub mixture over chicken and marinate for at least 30 minutes or up to 8 hours.
  3. In a bowl, combine all salsa ingredients except avocado. Chill for 30 minutes.
  4. Grill or sear chicken over medium-high heat 3–5 minutes per side, or until internal temp reaches 165°F. Let rest 5 minutes.
  5. Gently fold chopped avocados into salsa before serving.
  6. Slice chicken and top with avocado salsa. Serve warm and garnish with extra lime juice if desired.

Notes

For a vegetarian twist, try with grilled portobello mushrooms or tofu. Add mango or pineapple to the salsa for a fruity kick. Always fold in avocados last to keep them from browning.
